Ingredients 

  • 2 lb cherry tomatoes
  • 1/2 bunch parsley (about 1/2 cup, finely chopped)
  • 2 large garlic cloves, minced
  • 1 1/2 cups light Italian dressing (avoid creamy varieties)
 

Instructions:

  1. Prepare the Tomatoes:
    • Wash the cherry tomatoes and cut them in half.
  2. Combine Ingredients:
    • Place the sliced tomatoes into a glass mixing bowl or a quart-sized glass jar with a lid.
    • Add the chopped parsley and minced garlic to the tomatoes.
    • Pour in 1 1/2 to 2 cups of Italian dressing, just enough to lightly coat the tomatoes.
  3. Marinate:
    • Stir gently, cover, and let the mixture marinate at room temperature for at least 2-4 hours, or refrigerate overnight for enhanced flavor.

Notes

  • You can use any type or color of ripe cherry tomatoes.
  • Make sure to use a light Italian dressing, and avoid using creamy varieties.
