Ingredients

  • 1 lb chicken breast, chopped into bite-sized pieces (2-3 medium breasts)
  • 1 cup broccoli florets (fresh or frozen)
  • 1 zucchini, chopped
  • 1 cup bell pepper, chopped (any color)
  • ½ onion, chopped
  • 2 cloves garlic, minced or crushed
  • 2 tbsp olive oil
  • ½ tsp each: garlic powder, chili powder, salt, and pepper
  • 1 tbsp Italian seasoning (or preferred spice blend)

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Chop the chicken and vegetables into small, bite-sized pieces and place them in a large mixing bowl.
  3. Drizzle with olive oil, then sprinkle with garlic powder, chili powder, salt, pepper, and Italian seasoning. Toss well to coat.
  4. Transfer the mixture to the air fryer basket in a single layer. Cook for 10 minutes, shaking halfway through, until the chicken is fully cooked and slightly charred.
    • If using a smaller air fryer, cook in batches as needed.
  5. Serve hot and enjoy!
 
Notes
  • Spices: Swap Italian seasoning for taco, Cajun, lemon pepper, or any favorite spice blend. If using a pre-salted mix, reduce the added salt.
  • Vegetables: Use any quick-cooking veggies you like. If adding potatoes, air fry them separately for 10 minutes before adding the chicken and other veggies.
