1 (8 oz) package cream cheese, softened
1 (14 oz) can sweetened condensed milk (Eagle Brand)
1/3 cup fresh lemon juice
1 teaspoon vanilla extract
1 (9 oz) graham cracker crust
1 (21 oz) can cherry pie filling
Instructions:
Prepare the Cream Cheese Mixture:
In a large mixing bowl, beat the softened cream cheese until smooth and fluffy. If the cream cheese isn't soft enough, it may result in lumps.
Add the Sweetened Condensed Milk:
Gradually add the sweetened condensed milk, beating until the mixture is smooth.
Mix in Lemon Juice and Vanilla:
Mix in the fresh lemon juice and vanilla extract, making sure everything is well combined. This step ensures the filling will set properly.
Assemble the Pie:
Pour the cream cheese mixture into the graham cracker crust and refrigerate for at least 3 hours to allow it to firm up.
Top and Serve:
Top with cherry pie filling (you may not need the entire can) and refrigerate again before serving.
