  • 1 (14 oz) can sweetened condensed milk (Eagle Brand)
  • 1/3 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 (9 oz) graham cracker crust
  • 1 (21 oz) can cherry pie filling

 

Instructions:

  1. Prepare the Cream Cheese Mixture:
    • In a large mixing bowl, beat the softened cream cheese until smooth and fluffy. If the cream cheese isn't soft enough, it may result in lumps.
  2. Add the Sweetened Condensed Milk:
    • Gradually add the sweetened condensed milk, beating until the mixture is smooth.
  3. Mix in Lemon Juice and Vanilla:
    • Mix in the fresh lemon juice and vanilla extract, making sure everything is well combined. This step ensures the filling will set properly.
  4. Assemble the Pie:
    • Pour the cream cheese mixture into the graham cracker crust and refrigerate for at least 3 hours to allow it to firm up.
  5. Top and Serve:
    • Top with cherry pie filling (you may not need the entire can) and refrigerate again before serving.
