  • Bell Peppers – Adds color, crunch, and a hint of natural sweetness.
  • Shallot, Garlic, and Green Onions – The key aromatics that build deep flavor in this dish.
  • Cajun Seasoning – Gives the steak a bold and slightly spicy kick.
  • Soy Sauce – Enhances the umami flavors; swap with coconut aminos for a Whole30 option.
  • Cilantro – A fresh herb to brighten up the dish.
  • Olive Oil and Butter – Used for frying and adding richness to the skillet. (Use extra olive oil for a dairy-free version.)

Notes

Ingredients:

  • 2 medium sweet potatoes, diced into 1-inch cubes
  • 1 tsp salt
  • 1 lb top sirloin steak, cut into 1-inch cubes
  • Salt & pepper, to taste
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 tbsp butter (or more olive oil for Whole30)
  • 1 large shallot, diced
  • 3 cloves garlic, minced
  • 2 bell peppers, seeded and diced
  • ½ cup green onions, chopped (divided)
  • ¼ cup cilantro, chopped (divided)
  • 3 tbsp soy sauce (or coconut aminos for Whole30)
  • Fresh ground black pepper, to taste

Instructions:

  1. Prep the Sweet Potatoes:
Wash and scrub sweet potatoes. Dice into 1-inch cubes. Place in a microwave-safe bowl, sprinkle with 1 tsp salt, and microwave for 2 minutes. Stir and microwave for another 2 minutes until just starting to soften. Set aside.
  2. Cook the Steak:
Season steak cubes with salt, pepper, and Cajun seasoning. Heat a large skillet over high heat with 1 tbsp olive oil. Once hot, add steak in a single layer. Sear for about 2 minutes per side (4–6 minutes total). Remove from skillet and set aside.
  3. Cook the Veggies:
Return skillet to medium-high heat. Add remaining 1 tbsp olive oil and 1 tbsp butter. Sauté shallot, garlic, and pre-softened sweet potatoes for about 5–6 minutes until sweet potatoes are golden. Add bell peppers and cook another 4–6 minutes.
  4. Bring It Together:
Return the steak (with any juices) to the skillet. Add soy sauce (or coconut aminos), half the green onions, and half the cilantro. Mix and cook a few more minutes until everything is well combined and cooked to your liking.
  5. Finish & Serve:
Top with remaining cilantro and green onions. Add fresh cracked black pepper to taste.

1. Can I use a different cut of steak?

Yes! While top sirloin is recommended for its tenderness and flavor, you can also use ribeye, strip steak, or even flank steak. Just be sure to cut it into bite-sized pieces and adjust cooking time based on thickness.

2. How do I make this dish Whole30 compliant?

To make this Whole30-friendly, swap out the butter for additional olive oil and replace soy sauce with coconut aminos. The rest of the ingredients are naturally Whole30-approved!

3. Can I prep ingredients ahead of time?

Absolutely! You can chop the sweet potatoes, bell peppers, shallots, and steak ahead of time and store them in separate containers in the fridge. This makes cooking much faster when you’re ready to make the dish.

4. What’s the best way to get a good sear on the steak?

To get a perfect sear, make sure your skillet is very hot before adding the steak, and don’t overcrowd the pan. Cook the steak in a single layer and let it sear without moving for about 2 minutes per side.

5. Can I use a different type of potato?

Yes! While sweet potatoes add a natural sweetness, you can substitute with regular potatoes or even butternut squash for a similar texture. If using white potatoes, you may need to cook them a little longer.
