For Beef Tips and Gravy

  • Beef Chuck Roast – I use cubed beef chuck or stew meat for this dish. It’s tender and flavorful after simmering.
  • Olive Oil – Used for browning the beef before simmering in the gravy.
  • Yellow Onion – Adds sweetness and depth to the gravy.
  • Beef Broth – Provides a savory base for the gravy.
  • Condensed Onion Soup – I use canned French onion or regular onion soup to help thicken the gravy and add richness.
  • Worcestershire Sauce – Adds a savory umami flavor to the gravy.
  • Bay Leaf – Infuses a subtle, aromatic flavor into the sauce while simmering.
  • Salt and Black Pepper – For seasoning the beef and gravy.

For Thickening the Gravy

  • Cornstarch – Helps thicken the gravy to the perfect consistency.
  • Water – Used to mix with cornstarch to make the thickening slurry.

Ingredients:

  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 2 pounds beef chuck roast, cubed (or stew meat)
  • 10.5 oz beef broth
  • 10.5 oz condensed French onion soup (or condensed onion soup)
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)
To Thicken Gravy:
  • 3 tablespoons cornstarch
  • ⅓ cup water

Instructions:

  1. Prepare the Beef:
    • Trim any excess fat from the beef and season with ½ teaspoon each of salt and pepper.
  2. Brown the Beef:
    • Heat 1 tablespoon of olive oil over medium-high heat in a large pot or Dutch oven.
    • Brown the beef in small batches, transferring it to a bowl once browned.
  3. Sauté the Onion:
    • Lower the heat to medium and add the remaining tablespoon of oil.
    • Sauté the chopped onion for about 5-7 minutes, until softened.
  4. Simmer the Beef:
    • Return the beef to the pot, then add the beef broth, condensed onion soup, Worcestershire sauce, and bay leaf.
    • Stir to combine, bring the mixture to a boil, then cover and reduce the heat.
    • Let it simmer for 1 ½ to 2 hours, or until the beef is tender enough to shred with a fork.
  5. Make the Gravy:
    • Mix the cornstarch with ⅓ cup of cold water to create a slurry.
    • Gradually add this to the pot while stirring, until the gravy reaches your desired thickness.
  6. Finish and Serve:
    • Taste and adjust the seasoning with more salt or pepper, if needed.
    • Discard the bay leaf and serve the beef and gravy over mashed potatoes.

Notes:

  • The onion soup used in this recipe is canned condensed soup, found in the soup aisle of most grocery stores.
  • This dish can also be served over rice or pasta if preferred.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop.

  1. Can I use a slow cooker for this recipe?
Yes, absolutely! If you want a more hands-off approach, you can easily make this recipe in a slow cooker. After browning the beef and sautéing the onions, just add everything to the slow cooker. Set it on low for 6-8 hours or high for 3-4 hours. The beef will be just as tender and flavorful, with minimal effort.
  2. What cut of beef should I use?
For tender, melt-in-your-mouth beef, use beef chuck roast or stew meat. These cuts are perfect because they break down beautifully as they simmer, making the gravy rich and the beef tender. Avoid lean cuts like round steak, as they can turn out tough.
  3. How can I thicken the gravy without using cornstarch?
If you prefer to skip the cornstarch, try making a quick roux by cooking equal parts butter and flour in a separate pan. Stir this mixture into the beef and broth, and let it simmer to thicken. It’s a great alternative that will give you a rich, smooth gravy.
  4. Can I add vegetables to the beef and gravy?
Yes! Feel free to add mushrooms, carrots, or even bell peppers to the mix. Simply sauté them along with the onions at the beginning of the recipe. It’s a great way to add some extra flavor and nutrients to your meal without complicating the process.
  5. What’s the best way to serve Beef Tips and Gravy?
This dish pairs beautifully with mashed potatoes, rice, or egg noodles. For a well-rounded meal, add a side of steamed vegetables, like broccoli or green beans. It’s a classic comfort meal that will please the whole family!
