Notes

Ingredients:

  • 1 medium onion, halved and thinly sliced
  • 200g cherry tomatoes (or any in-season tomatoes), finely chopped
  • 1 red romano pepper, deseeded and finely chopped
  • 1 medium red chili pepper, finely chopped
  • 2 tablespoons fresh flat-leaf parsley, finely chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon pomegranate molasses
  • 2 teaspoons pul biber (Aleppo pepper), or to taste
  • Salt and pepper, to taste
 

Instructions:

  1. Prepare the Onion:
    • Start by rubbing the sliced onion with a pinch of salt and letting it sit for a few minutes. This will help mellow out the sharpness of the raw onion.
  2. Chop the Vegetables:
    • Finely chop all the vegetables and parsley separately, then combine them.
    • Continue chopping until the mixture resembles a chunky, yet spreadable texture between a salad and a dip.
  3. Season the Mixture:
    • Transfer the mixture to a bowl and season with lemon juice, pomegranate molasses, pul biber, salt, and pepper.
    • Adjust the seasoning to your taste.
  4. Serve:
    • Serve immediately and enjoy!
 

Tips:

  • If your tomatoes aren’t as ripe or flavorful as you'd like, add 1-2 teaspoons of high-quality tomato paste to enhance the taste.
  • For a more intense flavor, swap the pul biber for acı biber salçası (Turkish hot pepper paste) for an added umami kick.
