Notes

Ingredients:

  • 8 eggs
  • 1 lb turkey sausage (seasoned, like Jimmy Dean or Applegate)
  • 1 1/2 cups whole milk (or heavy cream for a richer texture)
  • 24 oz frozen tater tots
  • 2 cups shredded cheddar cheese
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1/4 tsp garlic powder

 

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
    • Lightly grease a 9x13-inch baking dish with non-stick cooking spray.
  2. Cook the Turkey Sausage:  
    • In a skillet over medium heat, cook the turkey sausage, breaking it into small pieces as it cooks.
    • Once browned, drain any excess grease and set aside.
  3. Prepare the Egg Mixture:
    • In a large bowl, whisk together the eggs, milk (or cream), salt, pepper, and garlic powder until well combined.
  4. Assemble the Casserole:
    • Arrange a layer of frozen tater tots in the bottom of the prepared baking dish.
    • Top the tater tots with the cooked turkey sausage, followed by the shredded cheddar cheese.
    • Pour the egg mixture evenly over the casserole, making sure everything is coated.
  5. Bake:
    • Cover the baking dish with foil to prevent the edges from overcooking.
    • Bake for 40 minutes.
    • After 40 minutes, remove the foil and continue baking for another 15-20 minutes, or until the center is fully set and the eggs are cooked through. Keep an eye on the casserole, as cooking times may vary depending on your oven.
  6. Serve:
    • Serve hot, with optional toppings like sour cream, salsa, or diced tomatoes.
 
Notes:
  • You can swap out heavy cream for whole milk if you want a lighter version.
