Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese, softened
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 1 ½ cups fresh spinach, chopped
  • 1 teaspoon minced garlic
  • ½ teaspoon red pepper flakes

 

Instructions:

  1. Preheat Oven: Set your oven to 375°F (190°C).
  2. Season the Chicken: Place the chicken breasts on a cutting board and drizzle with olive oil.
  3. Prepare Seasoning: In a small bowl, mix paprika, ½ teaspoon salt, garlic powder, and onion powder. Sprinkle evenly over both sides of the chicken.
  4. Create a Pocket: Using a sharp knife, carefully slice a pocket into the side of each chicken breast without cutting all the way through. Set aside.
  5. Make the Filling: In a small mixing bowl, combine the cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper flakes, and the remaining ½ teaspoon of salt. Mix well.
  6. Stuff the Chicken: Evenly divide the spinach mixture and spoon it into each chicken pocket.
  7. Bake: Arrange the stuffed chicken breasts in a 9×13-inch baking dish. Bake uncovered for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  8. Serve & Enjoy: Let the chicken rest for a few minutes before serving.
