Notes

Ingredients:

  • 1 cup butter (2 sticks)
  • 1 cup creamy peanut butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 6 ounces semi-sweet melting chocolate, chocolate melting wafers, or chocolate almond bark
 

Instructions:

  1. Prepare the Peanut Butter Mixture:
    • Using an electric mixer, blend the butter and peanut butter together until smooth.
    • Gradually add powdered sugar to the mixture and continue blending until the consistency is smooth.
    • Stir in the vanilla extract.
  2. Form the Peanut Butter Balls:
    • Form small mounds (approximately 5 dozen) with the peanut butter mixture and place them on a baking sheet.
    • Freeze them for about 30 minutes to firm up.
  3. Melt the Chocolate:
    • While the peanut butter balls are chilling, melt the chocolate, melting wafers, or chocolate almond bark according to the instructions on the package.
  4. Dip the Peanut Butter Balls:
    • Once chilled, dip each peanut butter ball into the melted chocolate using a toothpick, ensuring it is fully coated.
    • Allow excess chocolate to drip off before placing them back on a parchment paper-lined baking sheet to set.
  5. Let the Chocolate Set:
    • Let the chocolate set completely.
  6. Store:
    • Store the peanut butter balls in an airtight container in the refrigerator or freezer.

Notes:

  • Make Ahead: You can prepare the peanut butter balls several days in advance. Store them in the fridge or freeze them for up to a few months.
  • Freezing: Once the chocolate has set, store the peanut butter balls in a freezer-safe container or bag. They can be frozen for up to 3 months. Thaw in the fridge before serving.
 

Variations:

  • For a glossy finish: Melt paraffin wax with the semi-sweet chocolate for a shinier coating and a longer shelf life at room temperature.
  • Fully dipped or partially dipped: Cover the peanut butter balls completely in chocolate or leave some peanut butter exposed to resemble buckeye nuts from a buckeye tree.
  • Add-ins: Stir in mini M&M’s, chopped candies, or chopped nuts into the peanut butter mixture before dipping.
