Ingredients:
6-7 organic tomatoes, chopped
1 1/2 cucumbers, chopped
1 hot red pepper (optional, seeds in for extra spice)
1 stalk green onion, finely chopped
1/3 – 1/2 cup chopped cilantro or parsley (or a mix of both)
1/4 – 1/3 cup fresh lemon juice
1/2 tsp sea salt
Instructions:
Chop the tomatoes, cucumbers, red pepper, green onion, and herbs (cilantro or parsley).
In a large bowl, combine the chopped vegetables and herbs.
Add the freshly squeezed lemon juice and sea salt to the bowl.
Toss everything together and adjust the seasoning with additional lemon juice or salt, if needed.
Serve immediately and enjoy!
Notes:
For a variation, try mixing half cilantro and half parsley, or use just one of the herbs for a different flavor profile.
