Ingredients

For the Chicken

  • 2 lbs chicken breasts, trimmed

For the Lemon Herb Marinade

  • ¼ cup extra virgin olive oil
  • ¼ cup fresh lemon juice
  • 1 tbsp dried basil
  • 1 tbsp dried parsley
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp crushed red pepper flakes

Instructions

Marinate the Chicken

  1. Place chicken breasts in a large Ziploc bag.
  2. Add all marinade ingredients, seal the bag, and remove excess air.
  3. Massage the marinade into the chicken, ensuring even coating.
  4. Let marinate for at least 1 hour, up to 12 hours for maximum flavor.

To Grill

  1. Preheat grill to medium heat.
  2. Remove chicken from marinade and place on the grill.
  3. Cook for 5-7 minutes per side or until juices run clear.

To Cook on the Stove

  1. Heat 2 tbsp olive oil in a skillet over medium-high heat.
  2. Add chicken and cook for 5 minutes per side, or until fully cooked.
  3. Chicken should be firm to the touch and juices should run clear.
