Ingredients

For the Chicken

  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning (or preferred seasoning)

For the Salad

  • 2 romaine hearts, torn into bite-sized pieces
  • 1 cup croutons
  • cup shredded Parmesan cheese (plus extra for serving)
  • Lemon wedges (for serving)

For the Caesar Dressing

  • ½ cup mayonnaise
  • 1 clove garlic, minced
  • 2 tbsp grated Parmesan cheese
  • 1 ½ tbsp fresh lemon juice
  • 1 ½ tsp Worcestershire sauce
  • 1 tsp anchovy paste (optional)
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste

Instructions

Prepare the Dressing:

  • In a small bowl, whisk together mayonnaise, garlic, Parmesan cheese, lemon juice, Worcestershire sauce, anchovy paste (if using), and Dijon mustard.
  • Season with salt and black pepper to taste.
  • Refrigerate until ready to serve.

Grill the Chicken:

  • Preheat the grill to medium-high heat (400°F).
  • Pound the chicken breasts to ½-inch thickness using a meat mallet or rolling pin.
  • Drizzle with olive oil and season with Cajun seasoning.
  • Grill for 7-8 minutes per side, or until the internal temperature reaches 165°F.
  • Let rest for 3-5 minutes before slicing.

Assemble the Salad:

  • In a large bowl, combine romaine lettuce, croutons, and ⅓ cup of Parmesan cheese.
  • Add the Caesar dressing and toss until evenly coated (use dressing to taste).

Serve:

  • Top the salad with sliced grilled chicken.
  • Sprinkle with extra Parmesan cheese and serve with lemon wedges.

Notes

  • Swap Cajun seasoning with blackened seasoning, chicken seasoning, or lemon pepper for a different flavor.
  • Store leftover chicken, lettuce, and dressing separately in airtight containers in the refrigerator for up to 3 days.
