thick slices of bread (such as Texas Toast)

heaping cups of crispy rice cereal or crushed cornflakes
Instructions
Preheat & Prepare:
Preheat a griddle to
350°F
or heat a skillet over
medium heat
.
Pour the crushed cereal into a shallow dish.
Make the Batter:
In a separate shallow dish or blender, combine eggs, milk, flour, sugar, salt, cinnamon, and vanilla extract.
If whisking by hand, a few lumps from the flour are okay.
Coat the Bread:
Dip each slice of bread into the egg mixture, making sure to coat both sides.
Press the bread into the crushed cereal, flipping to evenly coat both sides.
Cook the Toast:
Melt a small amount of butter or grease the skillet/griddle with cooking spray.
Place coated bread slices on the hot surface and cook for a few minutes until golden brown.
Flip and cook the other side until crisp and golden.
Serve & Enjoy:
