Ingredients

Instructions
Prep the Chicken
Preheat oven to 450°F (230°C).
Place chicken breasts between two plastic sheets and pound to ½-inch thickness for even cooking.
Season both sides with salt and pepper.
Lightly coat each breast with sifted flour for a dry base.
Coat the Chicken
Beat eggs in a shallow bowl.
In another bowl, mix panko bread crumbs and ½ cup Parmesan cheese.
Dip each floured chicken breast in eggs, then press into breadcrumb mixture.
Let coated chicken rest for 10-15 minutes to help the breading adhere.
Fry Until Golden
Heat ½ inch olive oil in a skillet over medium-high heat until shimmering.
Fry chicken for 2 minutes per side, until golden brown. (It will finish cooking in the oven.)
Assemble & Bake
Place chicken in a baking dish. Top each breast with 2 tbsp tomato sauce—just enough for flavor without making it soggy.
Add mozzarella, provolone, fresh basil, and sprinkle the remaining ¼ cup Parmesan over the top.
Drizzle ½ tsp olive oil on each.
Bake & Serve
Bake for 15-20 minutes until cheese is melted, bubbly, and slightly golden.
Ensure the internal temperature reaches 165°F (74°C).
