Ingredients

  • 2 tsp vegetable oil
  • 1 Ib ground chicken (96% lean recommended)
  • 5 ounces shiitake mushrooms, finely diced (stems removed)
  • ½ cup onion, finely diced
  • 8 -ounce can water chestnuts, drained and finely diced
  • 1 ½ tsp minced garlic
  • 1 tsp minced ginger
  • Salt and pepper, to taste
  • 5 tbsp hoisin sauce
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tsp sesame oil
  • cup sliced green onions
  • 1 head butter lettuce, leaves separated

Instructions

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add ground chicken, season with salt and pepper, and cook for 5-6 minutes, breaking it apart with a spatula until nearly cooked through.
  • Stir in mushrooms and onions, cooking for another 4-5 minutes until softened.
  • Mix in water chestnuts, garlic, and ginger, and sauté for 1 more minute.
  • In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, and sesame oil.
  • Pour the sauce over the chicken mixture, stirring well to coat.
  • Sprinkle with sliced green onions and remove from heat.
  • Spoon the chicken mixture into lettuce leaves and serve immediately.

Notes

  • Hoisin sauce is essential for the dish’s signature flavor and is available in most grocery stores.
  • Shiitake mushrooms provide an authentic taste, but button mushrooms can be substituted.
  • For best results, use lean ground chicken (96% lean).
