Instructions
Heat vegetable oil in a large skillet over medium-high heat.
Add ground chicken, season with salt and pepper, and cook for 5-6 minutes, breaking it apart with a spatula until nearly cooked through.
Stir in mushrooms and onions, cooking for another 4-5 minutes until softened.
Mix in water chestnuts, garlic, and ginger, and sauté for 1 more minute.
In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, and sesame oil.
Pour the sauce over the chicken mixture, stirring well to coat.
Sprinkle with sliced green onions and remove from heat.
Spoon the chicken mixture into lettuce leaves and serve immediately.
Notes
Hoisin sauce is essential for the dish’s signature flavor and is available in most grocery stores.
Shiitake mushrooms provide an authentic taste, but button mushrooms can be substituted.
For best results, use lean ground chicken (96% lean).
