1 1/4 cups graham cracker crumbs (about 10 full graham cracker sheets)
1/3 cup melted butter
1/4 cup sugar (slightly less than 1/4 cup works well)
For the Filling:
1 (8-ounce) package cream cheese, softened
1 (8-ounce) container Cool Whip, thawed
3/4 cup powdered sugar
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1 (21-ounce) can cherry pie filling (or any favorite pie filling)
Instructions:
Prepare the Crust:
Combine the graham cracker crumbs, melted butter, and sugar.
Press the mixture firmly into the bottom of a 9x9-inch pan or a 9-inch pie dish.
Make the Cream Cheese Mixture:
Using a mixer (stand or hand-held), beat the softened cream cheese until fluffy.
Add the Cool Whip, powdered sugar, lemon juice, and vanilla extract.
Mix until smooth.
Assemble the Dessert:
Spread the cream cheese mixture evenly over the graham cracker crust.
Pour the cherry pie filling over the cream cheese layer and spread it out evenly.
Chill:
Refrigerate for at least 1 hour, or overnight for the best results. The longer it sets, the firmer it will become.
Serve:
Cut into squares and serve!
Notes:
You can use store-bought graham cracker crumbs (found in the baking aisle) or make your own by pulsing 10 graham cracker sheets in a blender or food processor.
To save time, you can also use a pre-made store-bought graham cracker crust (9-inch) or even an Oreo crust for a different twist.
Leftovers can be stored in the fridge for up to 5 days.
This dessert can be prepared up to 2 days ahead. If making in advance, refrigerate before adding the cherry topping. You can also prepare just the crust 2 days ahead and store it in the fridge.
