Notes

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • ½ cup all-purpose flour
  • ½ cup water
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Cooking spray (or parchment paper for lining)
  • ½ cup hot sauce
  • 2 tablespoons butter, melted
  • ½ tablespoon lemon juice
  • Ranch or blue cheese dressing for serving
  • Carrots and celery sticks for serving
 

Instructions:

  1. Preheat your oven to 450°F (230°C). Lightly grease a baking sheet with cooking spray or line it with parchment paper for easier cleanup.
  2. In a large bowl, combine the flour, water, garlic powder, paprika, salt, and pepper. Whisk until the batter is smooth.
  3. Add the cauliflower florets to the batter and toss until they’re evenly coated.
  4. Arrange the coated cauliflower on the prepared baking sheet in a single layer, leaving some space between each piece. Bake for about 20-25 minutes, flipping them halfway through, until they’re lightly browned and crisp.
  5. While the cauliflower is baking, prepare the buffalo sauce. In a small bowl, mix together the hot sauce, melted butter, and lemon juice until well combined.
  6. Once the cauliflower is done baking, remove it from the oven and brush the buffalo sauce over the florets.
  7. Return the cauliflower to the oven and bake for another 15 minutes, or until the edges start to brown.
  8. Serve the buffalo cauliflower bites hot with ranch or blue cheese dressing on the side, along with carrot and celery sticks.
 

Notes:

  • Storage: Any leftovers can be stored in an airtight container in the fridge for 3-4 days. For best results, reheat them in the oven or toaster oven to restore their crispiness (avoid using the microwave).
  • Substitutes:
    • For a gluten-free option, substitute almond flour or any gluten-free flour in place of the all-purpose flour.
    • For a vegan version, swap the butter for vegan butter or olive oil, and ensure the hot sauce is vegan-friendly.
    • Feel free to experiment with different spices like onion powder or smoked paprika for added flavor.
