Ingredients

Cake Batter:
  • ¾ cup white sugar
  • ¼ cup butter or shortening
  • 1 large egg
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 2 cups fresh blueberries
Crumb Topping:
  • ½ cup white sugar
  • ⅓ cup all-purpose flour
  • ¼ cup butter, softened
  • ½ tsp ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch baking pan.
  2. In a large bowl, beat together the sugar, butter, and egg using an electric mixer until the mixture is light and fluffy.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Add the dry ingredients to the creamed mixture in two parts, alternating with the milk. Mix briefly after each addition until just combined.
  5. Fold in the blueberries gently with a spatula. Pour the batter into the prepared pan and spread evenly.
  6. To make the topping, combine sugar, flour, butter, and cinnamon in a small bowl. Use your fingers or a fork to mix until crumbly.
  7. Sprinkle the topping evenly over the batter.
  8. Bake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool slightly before serving. Enjoy warm or at room temperature.
