Notes

Ingredients:

  • 1 lb lean ground beef
  • 1/2 cup finely chopped onion
  • 1/4 cup dried breadcrumbs
  • 2 garlic cloves, minced
  • 1 egg
  • 1/4 cup finely grated parmesan cheese
  • 3 tbsp ketchup
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, minced (or 1/2 tbsp dried)
 

Instructions:

  1. Preheat the oven to 400ºF. Lightly grease a large baking sheet with cooking spray.
  2. In a large bowl, combine the onion, breadcrumbs, garlic, egg, parmesan cheese, ketchup, salt, pepper, and parsley.
  3. Add the ground beef to the bowl and mix gently until just combined. Be careful not to overwork the meat.
  4. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  5. Bake in the preheated oven for 15-20 minutes, or until the meatballs are golden brown and cooked through.
 

Notes:

  • Makes about 30 meatballs (1-inch in size).
