Ingredients

  • 2 tbsp oil
  • 2 lb beef, cut into cubes
  • 8 oz mushrooms, chopped
  • 1 large carrot, chopped
  • 1 yellow onion, diced
  • 3 bay leaves
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1/2 cup barley
  • 1 tbsp salt (or to taste)
  • 1 tsp pepper (or to taste)

 

Instructions:

  1. Brown the Beef:
    • In a large pot, heat the oil over medium-high heat and brown the beef cubes.
  2. Sauté the Vegetables:
    • Add the diced onion, chopped carrot, and mushrooms to the pot.
    • Sauté the mixture until the vegetables are slightly golden.
  3. Add Seasonings:
    • Stir in the garlic, bay leaves, salt, and pepper.
  4. Simmer the Soup:
    • Pour in the beef broth, cover the pot, and let it simmer for about 45 minutes.
  5. Add the Barley:
    • Add the barley and continue simmering for an additional 20 minutes, or until the barley is fully cooked.
  6. Serve:
