Ingredients:
For the Stir Fry:
6 oz instant Ramen noodles (2 x 3 oz packages), discard the seasoning packets
1 lb broccoli, cut into 6 cups of florets
2 tablespoons olive oil (divided)
1 lb flank steak or top sirloin, thinly sliced
2 teaspoons sesame seeds (optional, for garnish)
2 tablespoons chives (optional, for garnish)
For the Stir Fry Sauce:
1 teaspoon fresh ginger, peeled and grated
3 cloves garlic, grated (about 2 teaspoons)
6 tablespoons low-sodium soy sauce
1/2 cup warm water
3 tablespoons light brown sugar, packed
1 1/2 tablespoons corn starch
2 tablespoons sesame oil
1/4 teaspoon black pepper
Instructions:
Prepare the Noodles:
In a medium saucepan, bring water to a boil.
Add the Ramen noodles and cook for about 3 minutes, breaking them up with a spatula.
Drain and rinse with cold water. Set the noodles aside.
Make the Sauce:
In a large measuring cup or bowl, combine all the sauce ingredients.
Stir well to dissolve the sugar and set aside.
Cook the Broccoli:
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the broccoli and 2 tablespoons of water.
Cover the skillet and cook for about 4 minutes, stirring occasionally, until the broccoli is crisp-tender.
Transfer the broccoli to a separate dish and set aside.
Cook the Beef:
Increase the heat to medium-high.
Add the remaining 1 tablespoon of olive oil to the skillet.
Add the sliced beef in a single layer and cook for 2 minutes on each side, or until the beef is cooked through.
Reduce the heat to medium-low.
Combine the Sauce and Stir Fry:
Re-stir the sauce if needed and pour it into the skillet with the beef.
Let it simmer for 3-4 minutes, stirring occasionally, until the sauce thickens.
Add Noodles and Broccoli:
Return the cooked broccoli to the skillet, along with the Ramen noodles.
Toss everything together, ensuring the noodles are well coated in the sauce.
If the sauce is too thick, add 1-2 tablespoons of water to thin it to your liking.
Garnish and Serve:
Serve the stir fry topped with sesame seeds and chives, if desired.
