Instructions:

- In a small bowl, mix all the sauce ingredients and set aside.
- In a large pan or wok, bring enough water to a boil over high heat. Once boiling, add the bok choy and blanch for about 30-45 seconds until the leaves turn vibrant green. Quickly strain and set aside on a serving plate.
- In the same pan, wipe it dry and bring it to medium heat. Pour in the prepared sauce and let it simmer until it thickens slightly.
