Ingredients

  • 6 small or 4 large boneless, skinless chicken breasts
  • Salt & pepper, to taste
  • 2 (10.5 oz) cans cream of chicken soup (or 1 can chicken + 1 can cream of celery)
  • 1 stick (½ cup) butter, cut into pieces
  • 1 (32 oz) can chicken broth (plus extra if needed for thinning)
  • 1 tsp Better Than Bouillon (optional, for richer flavor)
  • 1 (24 oz) package frozen egg noodles
  • Optional: Mixed vegetables, chopped parsley

Instructions

  1. Season the Chicken
    • Sprinkle chicken breasts with salt and pepper.
  2. Layer in the Crock Pot
    • Place seasoned chicken in the bottom of your slow cooker.
    • Spoon the soup over the chicken.
    • Scatter butter pieces evenly on top.
  3. Add Broth
    • In a separate bowl, whisk the chicken broth with Better Than Bouillon (if using).
    • Pour the mixture over the chicken and soup.
  4. Slow Cook – First Round
    • Cover and cook on LOW for 6 hours, until chicken is cooked through and tender.
  5. Shred the Chicken
    • Remove chicken from the pot and shred using two forks.
    • Return shredded chicken to the Crock Pot.
  6. Add Noodles (and Veggies)
    • Stir in the frozen egg noodles. Add mixed vegetables at this point, if desired.
    • Cook on LOW for another 2 hours, stirring occasionally.
    • If the mixture becomes too thick, add more broth to reach desired consistency.
  7. Finish & Serve
    • Optional: Stir in chopped parsley before serving.
    • Taste and adjust seasoning with more salt and pepper if needed.
