Ingredients:

  • 2 chicken breasts (sliced in half or 4 thin chicken breasts)
  • 8 tablespoons butter, divided
  • ½ cup Italian bread crumbs
  • ½ cup plus 1 tablespoon grated parmesan cheese, divided
  • ¼ cup flour
  • 2 medium zucchini, sliced
  • 2 garlic cloves, minced

Instructions:

  1. In a large skillet, melt 2 tablespoons of butter over medium heat.
  2. Prepare the chicken:
    • In a shallow dish, melt the remaining 4 tablespoons of butter.
    • In another shallow dish, combine the bread crumbs, ½ cup of parmesan cheese, and flour.
    • Dip each piece of chicken into the melted butter, then coat it with the bread crumb mixture. Place the coated chicken in the skillet.
  3. Cook the chicken on each side for about 3-4 minutes, or until the exterior is golden and crispy and the chicken is fully cooked. Remove the chicken and set it aside on a plate.
  4. Add 2 tablespoons of butter to the skillet. Sauté the minced garlic for about 1 minute, until fragrant.
  5. Add the sliced zucchini to the skillet and sauté until tender. Season with salt and pepper to taste. Stir in the remaining 1 tablespoon of parmesan cheese.
  6. Return the cooked chicken to the skillet and heat for another minute. Serve immediately.
