Ingredients
- 1 can (12-oz.) Spam
- ½ cup teriyaki sauce
- 2 cups Japanese short-grain rice
- 8 (2"-wide) strips nori
- 4 tbsp furikake seasoning
- Nonstick cooking spray
Instructions
Step 1: Prepare the Spam
- Remove Spam from the can, rinse the can, and set it aside.
- Slice Spam into 8 equal pieces and place in a large bowl.
- Pour teriyaki sauce over the Spam, ensuring all pieces are coated. Marinate for 15 minutes.
Step 2: Cook the Spam
- Arrange Spam in a single layer in an air fryer basket (reserve marinade).
- Air-fry at 400°F, flipping halfway, until glazed and warmed through (6-8 minutes).
Step 3: Cook the Rice
- Rinse rice under cool water three times and strain.
- In a medium pot, combine rice with 2 ½ cups water. Bring to a boil, then cover and reduce heat to low.
- Cook until the water is absorbed and rice is slightly overcooked for stickiness (about 20 minutes).
Step 4: Prepare the Sauce
- Transfer the reserved marinade to a small pot and bring to a boil.
- Simmer, stirring occasionally, until thickened (about 2 minutes).
Step 5: Assemble the Musubi
- Lightly coat the inside of the Spam can with nonstick spray.
- Press about ⅓ cup of rice into the can to mold it. Invert onto a sheet of nori. If the rice doesn’t hold its shape, freeze for 10 minutes.
- Sprinkle furikake over the rice, top with Spam, and brush with thickened teriyaki sauce.
- Wrap nori around the rice and Spam, dampening one end to seal.
