Ingredients

  • 1 can (12-oz.) Spam
  • ½ cup teriyaki sauce
  • 2 cups Japanese short-grain rice
  • 8 (2"-wide) strips nori
  • 4 tbsp furikake seasoning
  • Nonstick cooking spray

Instructions

Step 1: Prepare the Spam

  • Remove Spam from the can, rinse the can, and set it aside.
  • Slice Spam into 8 equal pieces and place in a large bowl.
  • Pour teriyaki sauce over the Spam, ensuring all pieces are coated. Marinate for 15 minutes.

Step 2: Cook the Spam

  • Arrange Spam in a single layer in an air fryer basket (reserve marinade).
  • Air-fry at 400°F, flipping halfway, until glazed and warmed through (6-8 minutes).

Step 3: Cook the Rice

  • Rinse rice under cool water three times and strain.
  • In a medium pot, combine rice with 2 ½ cups water. Bring to a boil, then cover and reduce heat to low.
  • Cook until the water is absorbed and rice is slightly overcooked for stickiness (about 20 minutes).

Step 4: Prepare the Sauce

  • Transfer the reserved marinade to a small pot and bring to a boil.
  • Simmer, stirring occasionally, until thickened (about 2 minutes).

Step 5: Assemble the Musubi

  • Lightly coat the inside of the Spam can with nonstick spray.
  • Press about ⅓ cup of rice into the can to mold it. Invert onto a sheet of nori. If the rice doesn’t hold its shape, freeze for 10 minutes.
  • Sprinkle furikake over the rice, top with Spam, and brush with thickened teriyaki sauce.
  • Wrap nori around the rice and Spam, dampening one end to seal.
