Notes

Ingredients:

  • 10.5 oz cream of chicken soup with herbs
  • 1 cup sour cream
  • 1 tablespoon Italian seasoning
  • 3 cups cooked, shredded or diced chicken
  • 2 sleeves Ritz crackers, crushed
  • ½ cup butter, melted

 

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly coat a 2-quart (or 8-inch) baking dish with non-stick cooking spray.
  2. In a large mixing bowl, combine the cream of chicken soup, sour cream, and Italian seasoning. Stir in the shredded chicken until well mixed.
  3. Transfer the chicken mixture into the prepared casserole dish.
  4. Sprinkle the crushed Ritz crackers evenly on top and drizzle with the melted butter.
  5. Bake uncovered for 25-30 minutes, or until the crackers are golden and the casserole is hot and bubbly in the center.
 
Notes:
  • You can substitute Cream of Mushroom Soup or regular Cream of Chicken Soup in place of the Cream of Chicken Soup with Herbs.
  • While this recipe calls for Ritz crackers, feel free to use 1 cup of regular bread crumbs or panko bread crumbs.
  • For a more balanced meal, add 1-2 cups of broccoli florets, peas, or mixed vegetables to the casserole.
