Instructions

- Sear the Chicken:Heat 2 tablespoons of olive oil in a large skillet over medium heat.Sear the chicken for 3-4 minutes per side until golden brown.Remove from the skillet and set aside.
- Sauté the Aromatics:In the same skillet, add the remaining tablespoon of oil and the chopped onion.Sauté for 2-3 minutes until softened.Stir in the garlic and sun-dried tomatoes, cooking for another minute until fragran
- Add the Spinach:Stir in the spinach and cook for about a minute, just until it starts to wilt.
